The Apogee Culinary Designs Dragon Utility Knife is able to make food look delicious by enabling to cut thin, even slices. The long length narrow blade slices without tearing or sawing. Ideal for slicing a wide variety of meats as well as cutting larger vegetables. Dragon is constructed of 3-mm thick Nitrogen-Enriched American BD1N Steel, hardened to a Rockwell Hardness of 63. This extremely robust one-piece construction features extreme sharpness and edge retention. The handle is made of FDA approved black resin and linen Canvas Micarta with three stainless steel rivets. The canvas material is dyed black and brilliantly finished to last for decades. The end-cap of the handle is made of 18/10 stainless steel, which provides outstanding stability and balance.

very sharp utility knife

The Dragon Fire 8.5 inch is my favorite knife, but is a big large for more detailed tasks. I found myself using a 6 inch Shun chef's knife for the smaller work, but it is not nearly as sharp as the BD1N steel, so I went in search for an alternative. Although I wanted something with a chef's knife shape, this utility knife works well for cutting cherry tomatoes or trimming bell peppers. Came very, very sharp out of the box, and I expect it to stay sharp based on the performance of my other Apogee blades.
